Orzo Salad with Mango Curry Dressing serves 8
1# dry orzo cooked and cooled
1 carrot peeled
1 red bell pepper
1 yellow bell pepper
2 ribs celery
1 daikon radish
Cut all the above vegetables in uniform 1/4 inch dice, set aside
2 bunches scallions chopped
1 bunch parsley chopped
2 jalapenos chopped
Add all prepared vegetables to the cooled pasta : salt and pepper to taste
Dressing
1 jar 10 oz.mango chutney
2 Tbsp. curry powder
2 Tsp. cayenne pepper
4 oz. rice wine vinegar or champagne vinegar
1 cup good quality salad oil
In a bowl combine 4 first ingredients, mix well. With a slow steady stream, whisk in the oil until blended Mix together the orzo, vegetables and dressing. Season to your liking. Serve at room temperature.
